Ingredients

For Dough:-

Maida- 300 gm

Baking powder- 1 tsp

Soda- 1/2 tsp

Malai- 2-3 tsp

Dahi- 2 tbsp

Salt to taste

Kalunji

Sugar- 1 tsp

Lukewarm water

For Stuffing:-

Aloo(boiled & chopped)-2

Carrot-1/2 finely chopped

Capsicum-1/2 finely chopped

Peas- 1/2 cup

Paneer (kisa hua)-1/4 cup

Cauliflower-1/2 cup (finely chopped)

Onion-2 (finely chopped)

Ginger- garlic- green chilli paste- 2-3 tsps

Salt to taste

Black pepper

Garam masala- 3/4 tsp

Kitchen King Masala- 1 tsp (optional)

Amchur/ nimboo ras- 1/2 tsp (1 tsp lemon juice)

Ghee/ oil

Method

For Dough:-

Maida chaan kar usmay namak aur kalaunji mila le aur bich may gap banaye (well)

Ab bich may dahi, malai, sugar, soda aur baking powder dalkar kuch der mix kare (maida may nahi) 1 min ke ass pass

Ab purey maida may mix kare aur gunguna pani milatey hue soft dough teady kare

Ab thoda sa oil laga kar kuch der patke aur dhak kar rakh de

For Stuffing:-

Kadai may oil garam kare usmay ginger garlic paste dalkar sek le

Ab paneer aur aloo chorkar sari sabjiya dale aur paka le

Ab last may aloo, paneer, namak, kitchen king masala, garam masala, nimboo ras aur kaali mirch mila kar kuch der aur seke

Utar kar thanda kar le

Mash kar le

Hara dhaniya mila le

To make kulcha:-

Dough ka ek thoda bada portion le aur uski choti si roti bele aur stuffing (masala) bich may rakhe aur pack karke halke hath se bele

Ab tave par seke

Jab dono side sik jaye tab uske jaali par rakh kar gas par kam aanch par thoda upar se seke (dono side se)

Ab butter lagaye aur cut karke serve kare
