Dosa

Crispy dosa sath may Nariyal chutney, Sambhar, Lal Chutney ūüėčūüėčūüėč

Here goes the recipe

Ingredients

For dosa batter:-

Mota Chawal- 3 cups

Udad dal- 1 & 1/2 cup

For aloo masala:-

Aloo-3-4 boil karke cut kiye hue

Paneer – kisa hua (optional)

Adrakh-hari mirch ka paste- 1-2 tsp

Salt to taste

Haldi- 1/4 tsp

Lal mirch- 1/2 tsp

Amchur- 1/4 tsp

Kitchen king masala- 1/2 tsp

Method

For dosa:-

Dal aur chawal ko dhoo kar bheega de 3-4 ghanto ke liye (agar jyada time na ho toh garam pani may 1.5- 2 hours bheega de) aur uske baad pani chaan kar piss le (sath may aap chaho toh thoda adrakh hari mirch bhi dalkar piss sakte ho)

Ab ise dhak kar kisi garam jagah may fermentation ke liye rakh de raat bhar

Next morning ghol may namak mila de

Thoda sa ghol alag karke pani mila kar patla kar le aur nonstick tave par dosa (ekdum patla chilla) banaye aur crispy hone tak seke

Plain dosa ready

For aloo masala:-

Kadai may oil garam kare sarso dale curry patta aur adrakh hari mirch ka paste add kare

Ab aloo aur masala dale aur do char min seke ab last may kisa hua paneer aur dhaniya patti mila de

For masala dosa:-

Plain dosa banaye aur jab thoda seek jaye tab masala spread kare aur roll karke serve kare (see video link given below)

Note:-

Aloo masala may aap apni pasand se koi bhi sabji add kar saktey hai (capsicum, carrot, cauliflower etc.)

For Sambhar

Ingredients:-

Arhar dal- 1 cup

Veggies (gajar, lauki, pumpkin etc)- 1 cup

Tomato- 3 big

Ginger- 2″

Green chillies- 3-4

Curry leaves-8-10

Salt

Black salt

Lal mirch powder- 1 tsp

Mustard seeds- 1/2 tsp

Haldi- 1/4 tsp

Sambhar masala- 2 tsps

Black pepper- 1/4 tsp

Imli chutney/ paste- 2-3 tsps

Chopped coriander for garnishing

Method:-

Make a paste(dardara means thoda mota) of tomato, ginger, green chillies and curry leaves

Dal dhookar cooker may dale sath may sari sabjiya (kati hui), tamatar wala paste, salt, haldi aur pani dale aur cooker band karke 2-3 siti lagaye.

Ab thoda sa oil garam kare usmay thodi si sarso(mustard seeds) dale aur jab tadak jaye tab 2-4 curry patta, lal mirch powder, sambhar masala dale aur thoda sa pani mil de.

Halka sa seke

Ab sambhar may mila de thodi si black pepper, black salt aur thoda sa imli paste/ sauce mila de thoda garam karle aur bareek kata hara dhaniya mila de

For nariyal chutney

Ingredients:-

1 nariyar (pieces kiya hua aur aap chaho toh chil kar piece karle)

2-3 tbsp bhuni chana daal/dali hui chana dal

2-3 hari mirch

1 tokda adrakh

4-5 curry patta

Salt

Method:-

Sabko mila kar pis le

Ab chutney may chowk/tempering lagaye

Thoda sa oil garam kare ismay rai/ sarso dale kuch curry patta dale jab tadak jaye tab chutney may ye chounk mila de

Ab chutney may aap apni pasand se thodi si dahi ya nimboo ras add kar le

Aap chaho toh piste time hi dahi ya nimboo dal sakte hai

Aap ko agar pasand ho toh aap dhaniya patti bhi piste time add kar sakte hai sath hi 1-2 cloves garlic bhi dalne se acha taste aata hai
