Malai Kofta in white gravy (restaurant style)

Malai kofta in white gravy

 

Usually I make malai kofta in red gravy but this one is for my sweetheart ☺️☺️☺️

Mere husband ko red gravy wala malai kofta bilkul pasand nahi wahi mere sasur ko mera banaya malai kofta (red gravy) hadd pasand hai….. dono ki choice ekdum different hai 🙄🙄🙄

 
Here goes the recipe

Ingredients

For Kofta (5-6 small)

Aloo- 1 large (boiled and mashed)

Paneer- 1/2 cup grated

Salt- 1-2 pinch

Cardamom powder (hari elaichi)- 1/4 tsp

Cornflour- 2 tbsp

Oil for deep frying

For Gravy

Onion- 1 large

Ginger-2-3″

Garlic- 2-3 cloves

Kaju- 10-12

Khuskhus/ poppy seeds- 1 tsp heaped

Magaj beej/ melon seeds- 1 tsp

Garam masala (homemade)- 3/4 tsp

Green cardamom powder- 1 tsp

Sugar- 2-3 tsps

Salt to taste

Malai- 1 cup

Milk- 1 cup

Oil/ ghee- 2-3 tsp

Other Ingredients

Malai- 2-3 tbsp (beaten for garnishing)

Method

For kofta

Aloo ko boil karke mash kar le aur usmay kisa hua paneer, namak aur elaichi powder mix karle (namak halka sa hi dale)

 

 

Ab inke balls bana le aur cornflour (sukha) may lapet kar deep fry kare

Bahut jyada der tak nahi talna hai nahi toh soft nahi rahega

 

 

For Gravy

Pyaz, adrakh aur garlic mila kar smooth paste bana le

Soak kaju, magaj beej and khuskhus in warm water for 10-15 min and after that make a smooth paste of it

Kadai may ghee/ oil garam kare aur usmay pyaz wala paste dalkar seke

Jab oil chorne lage tab ismay kaju paste dale aur do min seke (agar jaroorat ho toh thoda sa pani dal le)

Ab ismay malai aur milk add kare aur chalatey rahe (starting may lagataar baad may bich bich may)

Jab aadha reh jaye tab elaichi powder, garam masala, namak aur sugar add kare aur do min boil kare aur utar le

Gravy ready

Ab jab serve karna ho toh aap gravy garam kare (jyada thick lage toh add water) aur do min kofta usmay dal kar rakh de

Uske baad serve kare upar se malai (beaten/ phainti hui) se garnish kare
