2 cup dahi (chaan le)

1 tbsp besan

Salt

1/4 tsp haldi

1 tsp lal mirch pwd

1 pinch hing

Chounk:

Oil

Panchmel chounk(rai/sarso, jeera, methi dana, ajwain, saunff)

Curry patta

Laung, ilaichi(2-2)

Bareek kata hara dhaniya

Method
Ek bowl may dahi chaan le aur usmay besan namak aur haldi mix karle (lumps na pade gaanth)

Kadai may tail dale (1-2tsp) ismay hing, panchmel chounk aur laung ilaichi dale jab tadak jaye ismay curry patta dale ab

Ab lal mirch dale aur turant dahi dale thoda sa pani bhi dale aur ise chalaye 15-20 ubaal de

Dhaniya se garnish kar de

Note:

Kadhi ready hai ye check karne ke liye chamach se kadhi pour karke dekhiye agar pani pani jaise lage means pani alag aur kadhi alag toh abhi aur pakaye

For dough:

250 gm aata

Ghee

Other ingredients:

50 gm ghee

100 gm pwd sugar(pisi chini)

Method
Aata aur 1 tbsp ghee mila kar aata guthey

Ab iski thodi moti moti rotiya ghee laga kar seek le aur thanda kar le

Jab roti thandi ho jaye toh inhe thoda mota pis le

Ab ismay sugar aur ghee add karke ache se mix karle

(Sab sabziyo ko cut kar le)

Other ingredients:

Chawal- 3/4 cup

Hari moong dal(chilke wali)- 3/4 cup

Salt

Lal mirch pwd- 1 tsp

Haldi pwd-1/2 tsp

Water- 4-5 cups

Hing- 1 pinch

Adrakh kisa hua-1 tsp

Laung-2

Ilaichi-2

Tez patta- 1-2

Shudh ghee-2-3tsp

Jeera- 1/2 tsp

Method
Ek bade cooker may ghee garam kare usmay jeera, tez patta, laung, ilaichi, hing ka chauk lagaye ab adrak dale thoda sa seek jane ke baad sab sabziya dale aur 1-2 minute seeke ab pehle se dhoo kar bhega hua chawal aur moong dal dale.

Namak, haldi, lal mirch aur pani dale aur ache se mix karke dhakan band ka ke do se teen siti lagaye

Jab ready ho jaye ismay aap apni pasand se chini milaye

Mere yaha har koi meethi khichdi nahi khata isliye may chini upar se milati hu

Besan – 2 cup

Aata- 1-2 tbsp

Namak

Ajwain- 1/4 tsp

Oil-2 tbsp

Kasuri methi thodi si

Lal mirch

Method

Sabko mix karke pani ka chinta (sprinkle) dete hue kadak aata lagaye

Iski roti thodi choti choti bel kar tave par phulke ke jaise seeke aur utar kar ghee lagaye

3/4 cup chilke wali moong dal

(Dono dal dhokar namak haldi milakar ubal le(2 siti))

For Tadka:

Ghee- 1 tbsp

Jeera- 1/2 tsp

Hari mirch (bareek kati hui)- 1-2

Adrakh (kisa hua)- 1 tsp

Hing-1 pinch

Lal mirch- 1 tsp

Tamatar bareek kata hua- 2

Method

Ghee garam karke usmay jeera dale phir hing uske baad adrakh hari mirch dalkar seeke ab tamatar add kar de seek jaye toh ismay lal mirch dale aur dal mila kar 1-2 bar boil kare

Dhaniya patti se garnish kare

Ingredients

Sangri- 1 cup

Masala:

Aam achar ka masala- 1 tsp

Namak

Lal mirch- 3/4 tsp

Laung-1-2

Tez patta-2

Jeera- 1/2 tsp

Hing- 1 pinch

Sarso ka oil (mustard oil)- 2 tsp

Dahi- 1/4 cup

Method

Sangri ko saff karke dhoo le aur 4-5 hours bheega de thodi si haldi dalkar

Ab isi pani ke sath cooker may dale aur 2 siti lagaye aur chaanle pani kaam nahi aayega
Kadai may oil dale garam hone par jeera,hing, tez patta, laung dale ab ismay lal mirch dale sath hi sath sangri aur dahi bhi dale kabhi kabhi phat jati hai dahi par koi baat nahi

Ab namak achar ka masala mila kar thoda gravy thick hone tak seeke

Leswa Achar

Ingredients

Leswa- 6 kg (see notes)

Salt- 400 gm

Haldi- 1/4 katori

Lal mirch- 1 katori

Saunff (pisi hi)- 250 gms

Pili Sarso(yellow mustard)(pisi hui)- 1/2 kg

Kalunji- 2 tsp

Hing- 1/2 tsp

Sarso ka oil(mustard oil)- 1- 1 1/4 kg(pura achar andar doob jaye itna lena hai)

Aam- 2- 2 1/2 kg (chilkar kisa hua/ grated after pilling)(see notes)

Dry meethi seeds- 1/2 katori (pisa hua)

Notes:

Leswa ko sabse pehle dhoo le cap/topi nahi utare
Ab kholte (boiling water) pani may dale aur ek ubal de kar chaan le ab cap(topi) utar kar kapde par phaila de aur 2-4 hours sukhne de agar chaaw may sukha rahe hai toh 4-5 hours

Aam ko wash karke chilka utar kar kisle(kadukas) ab kisa hua aam ko toole means aam ka measurement kadukas karne ke baad karna hai

Method

Sarso tail ko dhua utne tak garam kare phir thoda thanda kar le ab ismay namak chorkar sare masale dale aur jab pura thanda ho jaye tab ismay namak mila le

Ab ek plastic tub may leswa, aam aur tail may mix kiya hua masala sabko dale aur ache se mix karle

Iske upar kapda bandh kar do din dhoop lagaye aur bich bich may achar ko mix karte rahe

Kadai may tail garam kare jeera dale hari mirch aur curry patta dale

Ab aloo aur sare masale dal kar mix kare kuch der seke

Nikal kar dhaniya patta mila le

Masala:

Namak

Lal mirch- 1/4 tsp

Haldi- 1/2 tsp

Dhaniya pwd- 2 tbsp

Amchur- 1/4 tsp

Thodi moti hari mirch le usko ache se dhoo kar poch le

Bich se bharne ke liye chira lagaye

Zara sa aam ka achar ka masala(nahi ho toh koi baat nahi thoda sa sarso tail mila le)

Ab masala mix karke mirchi may bhar le

Kadai may sarso tail dale mirchi dale kuch der kam aanch per seeke bich bich may palat de

Agar kam quantity may banana ho toh tave par bhi sek sakte hai
