Shahi Tukda


Shahi tukda is a popular Indian sweet dish. It is a rich bread pudding with dryfruits and topped with rabdi.

Here is the recipe:-

Ingredients:-

For Rabdi (using leftover kaju katli):-

Milk – 2 litres

Kaju katli- 8 (chura kar le)

Sugar- 1/2 katori (40-50 gm)

Elaichi powder- 1/4 tsp

Kesar-1 pinch (2 tsp milk may bheega hua)

For frying bread:-
Ghee- for frying
Bread- 10-12 slices (brown portion cut karke alag kare aur man chaha shape may cut kar le)

For sugar syrup/chashni:-

Chini- 1 cup

Pani-1/2 cup

Elaichi powder-1 chutki

For garnishing:-

Chopped- kaju, pista(unsalted), badam

Method:-

For Rabdi:-

Kadai may doodh boil karne rakhe

Jab doodh 1/2 ho jaye tab barfi add kar de aur ache se mix jab milk thick ho jaye ismay chini mila de do char min kam anch pe paka ke elaichi aur kesar mila de do min aur paka kar utar le thanda ho jane ke baad ise 3-4 hours fridge may thanda hone rakh de

For frying bread:-

Ghee garam kare usmay bread ko deep fry karke alag rakh le (for frying use flat pan/ tai)

For chashni (sugar syrup):-

Pan/ kadai may pani aur chini mila ke boil kijiye aur ek taar ki chashni bana le ab elaichi powder mila le

For Shahi tukda plating:-

Jab serve karna ho tab chashni garam kare bread jo fry karke rakhi hai usko kuch der dip karke rakhe phir chaan le (agar chashni thick lage toh halka sa pani mila le).

Serving plate may sabse pehle thodi si rabdi dale uske upar bread(chashni may dip ki hui) rakhe upar se thodi aur rabdi dale aur upar se kaju, badam aur pista se garnish kare.
