Instant Khaman Dhokla


Khaman dhokla is a specialty of Gujarat. With this easy step by step pictorial recipe you can prepare soft and spongy instant dhokla in less than 30 minutes.


Here is the recipe:-

Ingredients:-

Besan-2 cup

Suji-4 tsp

Citric acid- 1/4 tsp (pani may ghol le)

Sugar- 2 tsp

Salt

Eno- 1 sachet (3/4 tsp)


For tempering (tadka):-

Oil- 1 1/2 tsp

Curry leaves-6-7

Green chilies- 2-3 (cut into big pieces)

Mustard seeds-1/4 tsp

Sugar- 1 tsp

Salt- 1/4 tsp

Water- 1/4 cup

Coconut (grated) & Chopped coriander for garnishing


Method:-

Suji, besan, namak, sugar sabko ek bowl may dalo


Citric acid dalo aur thoda pani dalkar ache se mix karo koi lumps na aaye

Ab eno milakar ache se mix karo

Ek badi kadai ya topiya may ring rakhe aur ring ke aadhe tak pani dale aur thoda garam kar le uske baad ek kinari wali plate ko thoda oil se grease kare phir ghol dal kar upar halki si lal mirch sprinkle kar do (usse colour bhaut sundar aata hai)

Ab thali ko ring ke upar rakh kar upar se kadai ko ache se cover kar de aur lagbhag 15 minutes tak steam kare


15 minutes ke baad check kar le ki dhokla pak gaya hai ya nahi uske liye ek knife ko dhokle ke bich dale aur bahar nikal ke dekhe agar knife clean ho toh dhokla ready hai. Nahi toh ise kuch der aur pakaye.


Ise bahar nikal le aur thanda karke cut kar le (sides se bhi)


Jab ban jaye iske upar chownk (tempering) dale

Chownk (tempering):-

Oil may thoda sa rai, curry patta, hari mirch dale


Gas band karke ismay thoda sa namak aur chini milakar thoda pani dale


Pani may chini ache se ghul jaye toh ise dhokle pe sab taraf dale (sides may bhi)


Upar se dhaniya patti aur kisa hua nariyal se garnish kare

Note:

Ghol gholne ke liye lagbhag 3 cup pani lagega (usi may se thoda sa pani may citric acid ghol lijiye)

Citric acid ki jagah nimboo use kar sakte hai nimboo ras:- 1- 1 1/2 tsp

Dhokla lagbhag 15 min may pakk jata hai
